Mediterranean Roasted Cauliflower

This side dish was born out of a bad case of the blahs. Sick of all my usual go-to's, I needed something with some pizazz to brighten up my evening and my palate.

A great dish to serve alongside fish or lamb.

With its bright flavors, nutrition-packed ingredients, and simple cooking philosophy, I knew Mediterranean was the only way to go. In the classic mediterranean style, I really let the ingredients speak for themselves in this recipe, using techniques and seasonings that merely enhance the natural flavors of the vegetables.


The result? A decidedly non-blah dish


Mediterranean Roasted Cauliflower

With Cherry Tomatoes and Thyme


Ingredients:

  • 1 medium head of cauliflower

  • 1 cup heirloom cherry tomatoes

  • 1/2 cup extra virgin olive oil

  • 2 teaspoons kosher salt

  • 1 teaspoon freshly ground black pepper

  • 2 tablespoons fresh thyme leaves

Method

  1. Heat the oven to 375ºF. Cut the head of cauliflower into florets.

  2. On a baking sheet, toss the cauliflower florets and cherry tomatoes with the olive oil, salt and pepper. Roast at 375ºF for 20 minutes or until the tomatoes have burst and the cauliflower is tender.

  3. Toss the roasted vegetables with the fresh thyme while still warm. Serve as a side dish or vegetarian main.

Serves 4 Prep Time: 5 minutes Cook Time: 20 minutes
