These thick and creamy pumpkin pie overnight oats are the perfect healthy breakfast to satisfy those holiday cravings without throwing your health goals out of whack.
Healthy Pumpkin Pie Overnight Oats
Makes 1 serving of pumpkin pie overnight oats. Recipe can be scaled up to make multiple jars of oats. They will keep in the fridge for up to a week.
1/2 cup sprouted gluten free oats
1/2 cup unsweetened vanilla almond milk
1/4 cup pumpkin puree
2 tablespoons pure maple syrup or honey
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon salt
1 tbsp. roasted pumpkin seeds
In a medium sized bowl, mix together the oats, almond milk, pumpkin puree, sweetener, spices and salt.
Pour into a glass jar and place in the fridge for 4-8 hours. Top with pumpkin seeds right before eating.
